
Love or hate ? This is a simple recipe and results in a mild flavoured, crisp product which keeps for weeks (or months ??)
Safety first:

1Kg Red onions
Pickling liquid
400ml Water
300ml Cheap White Vinegar
100g Sugar
30g Salt
20 Juniper berries (bruised)
Prepare the onions:
Slice onions
Pour over a kettle of boiled water, then strain
(removes some rawness and bitterness)
Make the Pickling liquid
Put the other ingredients in a pan and bring to the boil
Stir to dissolve
Allow to cool

Push the onion rings into jars
Make a tight fit
Top up the jars with cooled pickling liquid and juniper berries
Ideally they should sit for 2 days, but can be eaten after 2 hours if you like

You can do this with any vegetable you fancy:
Carrot ribbons
Zucchini spirals
etc
